Protein pancakes seem to be coming into their own now in people’s healthy eating plans and as far as recipe’s go and also the cooking, you can’t get any easier and nicer tasting too.
It’s easy to adapt these pancakes to suit your taste and also calorie intake if needed too.
You just swap the third of a banana for unsweetened apple sauce or apple puree or even 2 tablespoons of peanut butter and recently I have been adding a little super reds berry anti-oxidant powder to the mix which if mixed in with a vanilla protein powder tastes delicious, if you can get over the red coloured pancakes that is.
Ingredients for you for the Easy as Banana Protein Pancakes ::
1/3 of a Banana
3 Egg whites
¼ Scoop of vanilla protein powder or natural protein powder of choice
1/2 Teaspoon of Oats
1/2 Teaspoon of low fat unsalted cottage cheese
Maybe a drop of stevia sweetner (Depends on your fruit or top ingredient of choice)
Maybe a little cinnamon (Depends on your fruit or top ingredient of choice)
How to Cook and Serve ::
This protein pancake recipe takes little preparation and little cook time too, so you will be eating in no time.
Take the banana and mash until it’s a puree.
Separate the egg white into a bowl and add the rest of the ingredients into the mix, if a little thick, add in one more egg white if needed and then mix well, or you may want to blend in.
The protein powder is your choice, probably a low fat, low carb type would be the best and maybe unflavoured although I add vanilla flavoured to most and it is very subtle and doesn’t affect the overall flavour of the pancakes too much, just use what you have and as long as it isn’t a way out flavour, you’ll be ok.
Note here too, something I have done before, if you put the ingredients into a 600ml protein shaker cup and give it a good shake this works and also great if you are staying at hotels with limited cooking utensils too.
Heat your frying pan up, I usually put it on about half to ¾ maximum heat and add in your preferred cooking oil, I usually use olive oil but have been experimenting with organic coconut oil recently, it depends on the ingredients, what I am cooking and how it affects the flavour in the end.
Pour pre mixed pancake ingredients into pan, let cook until golden brown and flip to cook other side.
It comes down to personal preference whether you cook many little pancakes or cook one pancake to rule all pancakes.
Also, depending on your preference for the main flavour ingredient you can experiment with additions on top too, for example a few mixed berries add to the flavour or if you are looking for brownie points from your partner they make the meal look awesome.
